My mom had elbow surgery the week before Thanksgiving, which meant the family had to chip in quite a bit on Thanksgiving dinner. This was not a bad thing necessarily, but my name is definitely not "Bethany Crocker". For good reason my family had little faith that I could pull off my assigned task of making sweet potato casserole.
Let's face it, I'm the cook in the kitchen who does not see the importance in measuring, thinks when something says "cook .... minutes" means "cook ....minutes and forget about it", thinks that if you don't have a certain ingredient it's ok to leave it out, and on and on. If I told you all the MANY things I have ruined you would laugh and probably never come over for dinner. My mom told me once again this trip home that I really need to learn to cook. She's been on me about this for awhile and I stay strong that I know how to cook. I'm just not good at it. Here's the thing. If I had someone to cook for I would learn to cook. If I ever have a family I will definitely take my mom up her cooking classes, but for now I'm content eating yogurt and granola for dinner and EVERY restaurant in NYC delivers. Besides my roommate and I think the oven is a great place to store things.
BUT all that to say I have to say I made an AMAZING sweet potato casserole for Thanksgiving! My dad even said it was the best sweet potato casserole he had ever had.(he might have just been trying to be nice, but i'll take the compliment anyway)
So I have to say I was proud of my creation and it made me a little more confident that I really can cook (when I want to)
I think the fact that my mom made sure I had all the ingredients out, I measured everything, and I even set a timer while it cooked in the oven all probably really helped!
I pray that one day I will have my own family to cook for and I will make sure to make my sweet potato casserole for them!

that was the best sweet potato casserole that we have ever had...you did an amazing job, not just with that but with the whole dinner. It proved to me that I am not indispensible when it comes to putting a meal on the table. Thanks for all you did to help me out.
mmm...why am i suddenly starving? you seem to be gaining skills not only in the kitchen, but w your camera, too! i may have to rope you into taking family pics when you visit fairhope next! youve got talent!
